St Lucian Banana Cake

While most people want their wedding in St Lucia to be well prepared in order to ensure that it goes smoothly, there is something unquestionably exciting about that slight sense of the unknown. If you want to know what to expect of a wedding in St Lucia when it comes to cakes, then why not try this recipe to get a pre-emptive taste of the Caribbean?

For those enjoying their wedding in St Lucia, the wedding cake will be prepared the traditional way by an expert on the island, but if you just want to experience the delicious flavours of this tropical delight, then it’s not difficult to bake a rough version of St Lucia’s famous banana cake!  A lot of local delicacies are made from this local fruit - banana ketchup is a particularly exotic choice to try! However, banana cake is probably the most famous, and tastes great as well.

For the cake:

350g self-raising flour
1 tsp bicarbonate of soda
2 tsp mixed spice
175g light muscovado sugar
4 eggs
200 ml sunflower oil
2 bananas, mashed
100g pineapple, very finely chopped
Finely grated rind and juice of 1 orange
100g pack walnuts, roughly chopped

For the frosting:

2 x 200g packs medium-fat soft cheese, at room temperature
200g icing sugar
50g honey-coated banana chips


1. Grease and line two 20cm sandwich tins.

2. Sift the flour into a large bowl with the soda, mixed spice and sugar.

3. Whisk the eggs and the oil until smooth.

4. Stir the egg mixture into the flour with the bananas, pineapple, orange rind and juice and walnuts. Stir well. Divide between the prepared tins.

5. Bake for 45 minutes in a pre-heated oven at 180C until risen and firm.

6. Cool for 10 minutes, then remove from the tins, peel off the paper and leave to cool completely.

7. Beat the soft cheese until smooth.

8. Gradually add the icing sugar to give a smooth frosting.

9. Spread half the frosting over one cake. Put the other cake on top. Spread over the remaining icing, swirling it with a palette knife.

10. Sprinkle over the banana chips.
