The Cliff at Cap at award winning Cap Maison Resort in the romantic island of Saint Lucia, is on the road again this August in Brighton, UK, on one of its trademark “Pop Up” restaurant adventures.
The team at Cap Maison are unashamed “foodies”and have taken the fine dining available at the resort ‘on the road’ many times. Islanders are quite used to unusual venues and menus being announced, when Executive Chef Craig Jones and his crew set up shop anywhere from a traveling food truck to a pirate ship and serve up a delicious meal.
Going further afield does not deter them either and the Cliff has been a guest performer in recent times in New York City at “City Grit” delighting New Yorkers with the unique Caribbean and French fusion cuisine that characterizes Craig’s menus.
The compliment is returned by the host chef making the trip to Saint Lucia and treating the island residents and hotel guests to a taste of their fine dining experience. In this case, Sarah Simmons, chef, entrepreneur and owner of “City Grit” made the trip and worked alongside Mr Jones producing both collaborative and competitive menus on two consecutive evenings.
So next up is the UK and “Drakes”, a fine dining eatery on England’s South coast overlooking the famous pier. For one night only, on Wednesday 26th August, Craig will take the helm in the kitchen giving Andy Mac, Head Chef a chance to have a night off and have someone cook for him for a change!
Our beloved Welsh Rastafarian chef will create a St Lucian-inspired gourmet menu showcasing his award winning culinary skills. The three-course dinner will be seafood-focused as both hotel restaurants are by the seaside; Drakes is located directly on the Brighton seafront near the iconic Brighton Pier. The menu will be accompanied by specially selected English and Sussex wines to match, Cap’s own rum punch, coffee and chocolate truffle from Rabot Estate in St Lucia and Cap Maison’s Solera-blended rum to finish.
This exciting gastronomic event is all part of the Brighton Food Festival’s International Chef Exchange which sees UK chefs swapping kitchens with international chefs across the globe
Andy MacKenzie will jump on a plane later in the year and will pay Craig a visit at Cap Maison, when the two will run a two night programme similar to the City Grit event.
