Last week, Cap Maison Chef Craig Jones made the trek to Guernsey International Food Festival and brought along plenty of island flavor.

As part of the International Chef Exchange event, Chef Craig took over the kitchen of Chef Simon Mckenzie at the Old Government House for one night only. Our award-winning chef treated guests to a three-course dinner with accompanying wine, including some of his Caribbean favorites from The Cliff at Cap and The Naked Fisherman.

The exchange is part of a reciprocal agreement which allows UK chefs to swap kitchens with international chefs across the globe. Additionally, Old Government House’s Chef Simon will be visiting us in St. Lucia for a Taste of Guernsey weekend taking place on the Caribbean Island in February 2017. Mouth-watering Menu

At the event, Chef Craig Jones brought his nouveau French West Indian menu to Guernsey. He elegantly presented the bounty of St. Lucia’s fresh local produce and readily-sourced seafood.

The creole-infused dishes included:

  • rum-marinated foie gras with mango and ginger
  • spiny lobster ravioli and tempura with Creole salsa and lemongrass foam
  • braised oxtail with seared scallop and textures of pumpkin

The evening was capped off with a piña colada cinnamon beignet and chocolate truffles with our famous cask-aged Solera Rum.
